Easy-peasy pancakes

Our easy-peasy pancakes are great for a snack when you just want to whip something up quickly.

The ingredients is also simple which most of us have in the fridge!

Makes 12 pancakes.


  • 100g plain flour

  • 2 large eggs

  • 300ml milk

  • 1 tbsp sunflower or vegetable oil, plus a little extra for frying

  • Lemon wedges to serve which are optional

  • Caster sugar to serve which is optional


  1. Put the flour, eggs, milk and the tablespoon of oil into a large bowl and whisk to a smooth batter.

  2. Set aside for 30 mins to rest.

  3. Gently heat your frying pan over a medium heat and wipe this with a piece of oiled kitchen paper.

  4. When hot, start cooking the pancakes. They will need approx. a min a side until golden brown.

  5. Serve with lemon wedges and caster sugar.

For a twist you can serve with ice-cream and honey which is just delicious!
