Our easy-peasy pancakes are great for a snack when you just want to whip something up quickly.
The ingredients is also simple which most of us have in the fridge!
Makes 12 pancakes.
100g plain flour
2 large eggs
1 tbsp sunflower or vegetable oil, plus a little extra for frying
Lemon wedges to serve which are optional
Caster sugar to serve which is optional
Put the flour, eggs, milk and the tablespoon of oil into a large bowl and whisk to a smooth batter.
Set aside for 30 mins to rest.
Gently heat your frying pan over a medium heat and wipe this with a piece of oiled kitchen paper.
When hot, start cooking the pancakes. They will need approx. a min a side until golden brown.
Serve with lemon wedges and caster sugar.
For a twist you can serve with ice-cream and honey which is just delicious!
