In these crazy times that we are having at the moment, we may have a little more time on our hands to do the things that we never seem to get chance to do.
This of course may include cooking something that we don't always feel the need to do, when our lives are normally so busy.
Along with this, it's also not a bad idea to build up our immune system as much as possible to keep fit and healthy.
So we have decided that in the next coming weeks, we will showcase some easy recipes that will help pack in that veg we all need.
The first recipe we decided to show, is this delicious creamy cheese & broccoli soup. Broccoli is low in calories, but contains a wealth of nutrients and antioxidants. It is a great source of vitamin K and C and also a good source of folic acid.
So let's get cooking!
Ingredients
1 tbsp olive oil
1 onion, peeled and chopped
4 medium potatoes, peeled and cubed
1 head of broccoli, trimmed and cut into florets
1 l of chicken stock - oxo cubes are our favorite
250ml single cream
180g mature cheddar cheese, grated - save a little to sprinkle
Pinch of sea salt and cracked pepper to taste
Parsley to garnish
Method
Warm the olive oil in a large pan and add the onions. Cook until soft and golden in color.
Add the potatoes cubes and continue to stir for just a couple of minutes.
Add the chicken stock and bring to the boil.
Then add the broccoli and reduce to simmer.
Simmer for approximately 20 minutes or until the potatoes and broccoli are soft.
Next blend until a smooth consistency is achieved and then stir in the cream.
Gradually add the cheddar stirring continuously for around 10 minutes.
Season as required and serve.
Add the parsley to garnish.
Serves 4 - 6
